Turkey Pecan Waldorf Salad Artful Dishes

Turkey Pecan Waldorf Salad

Description

Turkey Pecan Waldorf Salad is an update on a classic salad from the 1890’s. This savory fruit salad with apples and grapes also features a tangy creamy dressing you will love. Try this salad for a light lunch the next time you need a new twist on a turkey recipe!

Ingredients

Scale
  • 3 cups of cooked turkey, large dice
  • 1 cup apples, small diced with skin on, I use Honeycrisp or Gala
  • 1 cup red grapes, diced
  • 1/2 cup celery, small dice, about 2 stalks
  • 1/4 cup green onions (scallions), about 4, sliced thin, white and light green parts. (you can slice the dark green tops for a garnish if desired)
  • 3/4 cup pecan, toasted and chopped

Dressing

  • 1 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • zest from 1 lemon, about a teaspoon
  • juice from 1/2 lemon, about 2 tablespoons
  • 1/21 teaspoon kosher salt, to taste
  • 1/4 teaspoon freshly ground black pepper

Lettuce Salad (optional)

Instructions

  1. Whisk the dressing ingredients in a small bowl.
  2. Place all of the chopped salad ingredients in a large mixing bowl.
  3. Add 1/2 the dressing to the large bowl and mix with the ingredients. Add more dressing until you get the amount you like.
  4. If serving on the salad, toss the lettuce with the vinaigrette and cranberries. Place about 2 cups of lettuce in each serving bowl and top with as much turkey waldorf salad as you like!
  5. Serve with crackers or chips.

Notes

– For the dressing you can also do 1/2 cup mayo and 1/2 cup plain Greek yogurt.
– You can also substitute chicken or ham for the turkey.
