Protein Snack Boxes with Turkey and Cheese

Protein snack boxes with turkey and cheese are perfect for healthy, mix and match, on-the-go snacks or light lunches. To keep things interesting I like to add different kinds of nuts and chocolate covered treats. After all, variety is the spice of life, and snacks!

The Idea:

I sit at a desk most days, and while I’m sitting there all I can think is “what should I have for a snack?”. I like to graze on snacks through the day, but that can be dangerous! To avoid the vending machine and multiple bags of chips, I like to have these protein snack boxes with turkey and cheese ready to grab on my way out the door. Besides being delicious, the protein in the cheese, turkey and nuts keeps me full and happy. Adding something sweet like chocolate covered almonds or blueberries also curbs my sweet tooth! And because it’s dark chocolate covering something healthy, I can convince myself it’s also good for me.

The Ingredients:

The key to enjoying your protein snack boxes is to fill them with really flavorful, easy to eat ingredients. I started with smoked deli turkey, but I wanted to dice the turkey (and cheese) to make them easy to eat. I asked the guy at the deli to cut me a large slice of smoked turkey, about a 1/4 to a 1/2 inch thick, so I could dice it.

I like to make two different versions of the protein snack boxes, spicy and traditional. This is for variety and because I really like pepperjack cheese and spicy cashews, but my husband does not. Even if you’re making the snack boxes only for yourself, it’s still nice to mix things up. I also can never make up my mind, so I just choose everything and then mix and match!

For instance, I saw chocolate covered almonds and chocolate covered blueberries. I don’t think it’s realistic to have to make a choice between the two, so I used both.

The Preparation:

The only prep work is cubing the cheese and turkey. You can cut them into whatever size you like and consider bite-size. After that, load all of your snack items into your containers. I like these two sided containers just so everything doesn’t get all jumbled up together.

The Payoff:

The spicy version of the protein snack box has diced smoked turkey and pepperjack cheese with chili spiced cashews and dark chocolate covered blueberries. I found the cashews and blueberries at Trader Joe’s, but most grocery stores will have something similar.

The traditional version has diced smoked turkey with cojack cheese, roasted almonds and dark chocolate covered almonds.

Protein Snack Boxes with Turkey and Cheese

Description

Protein snack boxes with turkey and cheese are perfect for healthy, mix and match, on-the-go snacks or light lunches. To keep things interesting I also like to add different kinds of nuts and chocolate covered treats. After all, variety is the spice of life, and snacks!


Ingredients

Scale
  • 2 cups diced smoked turkey (1/2 cup in each snack box)
  • 1 1/3 cups diced cheese of your choice, I used pepperjack and cojack (1/3 cup in each snack box)
  • 1 cup nuts, I used almonds and chili spiced cashews (1/4 cup in each snack box)
  • 1 cup of dark chocolate covered nuts or blueberries (1/4 cup in each snack box)


Instructions

  1. Divide the ingredients evenly into 4 small covered containers.
  2. Store in the refrigerator until ready to eat.

Notes

If you don’t want to refrigerate the nuts, place them in a separate small container. I left mine all together in the fridge and didn’t have any problems, but I ate them quickly!
