Peanut Butter and Jam Oatmeal


Description

A delicious, hearty take on a classic combination! Peanut butter powder is the magic ingredient.

Oatmeal Ingredients:

  • 1 cup old fashioned oats (not instant or quick oats)
  • 2 cups water
  • 1/2 teaspoon kosher salt, plus 1/4 teaspoon for finishing
  • 1/4 cup (4 tablespoons) peanut butter powder
  • 2 tablespoons brown sugar

Toppings:

  • 1/2 cup almond milk, or whatever kind of milk you like
  • 2 tablespoons raspberry jam, or whatever kind of jam/jelly you like, mixed with 1 tablespoon of water
  • fresh berries, I used raspberries

Instructions

  1. In a medium saucepan, bring 2 cups of water and 1/2 teaspoon of kosher salt to a boil.
  2. Reduce the heat to low. Add the old fashioned oats and peanut butter powder and stir to combine. Make sure the oats don’t boil over while the heat reduces.
  3. Simmer uncovered for about 15 minutes. You want the oats to be tender, but not mushy, with most of the liquid absorbed.
  4. While the oats are cooking, stir the jam and water together in a small dish. It should be a good consistency to drizzle.
  5. When the oats are done, add the brown sugar and 1/4 teaspoon of kosher salt, stirring to combine.
  6.  To serve, place half the peanut butter oats in each dish. The drizzle with the thinned out jam, pour some almond milk around the oats, and top with fresh berries. Dig in!

Notes

Use whatever flavor jam, berries and milk you like!
