Marinated Tomato Salad with Basil and Balsamic


Ingredients

Scale
  • 3 cups of cherubs/cherry or other small tomatoes, halved
  • 1 large shallot, thinly sliced
  • 1/2 cup fresh basil, julienned (thinly sliced)
  • 1 cup feta, diced large

Dressing

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 23 cloves garlic, finely minced
  • 1 teaspoon kosher salt
  • freshly ground black pepper to taste

Instructions

  1. In a large bowl combine the tomatoes, shallot and basil.
  2. In a small bowl or dressing shaker, mix together all of the dressing ingredients.
  3. Pour the dressing over the tomato mixture and mix well. Let marinate at room temperature for 30-60 minutes, or refrigerate for a few hours.
  4. Before serving, top with the feta cheese. Dig in!
