How to make honey simple syrup: the perfect sweetener for cocktails like the Bee’s Knees, and to add to your lemonade and iced tea!

A small wide mouth mason jar full of the finished honey simple syrup on a table with an old fashioned honey pot and stir stick.

How to make honey simple syrup

Honey simple syrup is a snap to make and a great ingredient to keep handy in your fridge. It not only adds an interesting sweet note to delicious cocktails like The Bee’s Knees (cutest name for a cocktail ever!), but also to iced tea, lemonade and anywhere else you stir in a little sugar. The bonus of using a simple syrup is that is dissolves immediately, you don’t have to stir and stir and stir and stir the way you do to dissolve regular sugars.

The Ingredients

Honey, water in a measuring cup, a small sauce pan and optional cayenne pepper powder on a table.

For honey simple syrup, all you need are honey and water! But, if you want to make it a little spicy, you can also add a little cayenne pepper. Even more fun is to add a smoky, spicy undertone with ground chipotle chili pepper powder.

The Preparation

Making honey simple syrup couldn’t be easier, measuring the ingredients is really the only prep work needed! When you’re measuring a sticky ingredient like honey (or corn syrup or molasses) it’s a good idea to spray your measuring cup with a little cooking spray first. This way the honey will slip right out of the measuring cup without leaving any behind.

A container of honey, an empty half cup measuring cup and a can of cooking spray on a cutting board.

Other than that, there is no prep work! Just measure everything into a small saucepan, heat gently until everything is combined, then pour into a jar for storage in your refrigerator. Another nice thing about simple syrups is that they last for a long time, at least a few months. Unless you are perfecting your Bee’s Knees cocktail, then it won’t last very long….

The Payoff

Make a jar of honey simple syrup today and you’ll be ready the next time the urge for a Bee’s Knees or a sweet tea strikes!
