Cast Iron Carrots with Garlic and Honey

A sweet, healthy, flavorful and easy side dish that everyone will love!


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound of carrots, peeled and sliced 1/4 inch thick on a diagonal
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon pepper (or to taste)
  • 2 cloves of garlic, minced
  • 2 tablespoons of honey

Instructions

  1. Heat the oil in a cast iron pan over medium high heat. Add the carrots and spread out to allow as much browning as possible. Sprinkle the salt and pepper on top of the carrots.
  2. Let the carrots sit for a minute or two to start browning, then stir well. Continue doing this for about 10 minutes, letting the carrots cook undisturbed a few minutes at a time. This is not a stir fry! If they seem to be browning too quickly, turn the heat to medium.
  3. Once the carrots are nice and browned, add the minced garlic and stir for about 30 seconds. Don’t brown the garlic too much or it will get bitter.
  4. Turn off the heat and add the honey to the pan. Stir to coat and serve immediately!

Notes

If you want to double the recipe, you will want to make them in batches, or use a really big cast iron pan. If the carrots get too crowded in the pan, they will start to steam instead of browning.
If you want to make the carrots in the oven, preheat to 400 degrees and toss the carrots with the olive oil, salt and pepper. Spread out on a sheet pan and roast for about 20-25 minutes, adding the garlic for the last 5 minutes or so. Put in your serving bowl and toss with the honey before serving.
