Amazing Matcha Energy Balls with Cashew Butter


Description

Energy balls! The cutest name for the best, healthyish, unbaked sweet treat. And these amazing matcha energy balls with cashew butter are chock full of good stuff (oats! chia seeds! honey! mini chocolate chips! coconut!). Say hello to your new favorite dessert, snack and breakfast.


Ingredients

  • 1 3/4 cup old fashioned oats (not quick oats or steel cut oats)
  • 1 cup cashew butter
  • 1/2 cup honey
  • 1 tablespoon matcha green tea powder
  • 2 teaspoons vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • 1 teaspoon chia seeds
  • 1/2 teaspoon kosher salt

Instructions

  1. Measure all ingredients into a large mixing bowl.
  2. Stir well until all ingredients are combined and evenly distributed. If you have time, refrigerate for 30 minutes (this will make it easier to scoop).
  3. Using a small cookie scoop or a tablespoon, scoop out a portion, then roll between your palms while packing the ingredients together and forming a ball. Continue scooping and rolling until all the dough is gone. You’ll get 24-26 energy balls.
  4. Store the energy balls in a covered container in the fridge. Eat within 7 days for best flavor and texture. Try to eat just one!

Notes

  • If using a natural style cashew butter, make sure it’s well stirred together before you measure.
  • If you don’t have cashew butter, you can sub peanut or almond butter, but the flavor will change.
  • You can use sweetened or unsweetened coconut.
