Roasted Garlic White Bean Dip

Description

Roasted Garlic White Bean Dip is an easy, healthy snack that uses ingredients straight from your pantry. It’s a three ingredient appetizer with not only roasted garlic, but smoked paprika for a one-two punch of flavor. Serve with chips, crackers and sliced veggies and everyone’s happy!


Ingredients

  • 2 14 oz cans of white beans, drained and rinsed. Great northern or cannelini beans both work well.
  • 1 head of roasted garlic (click here for instructions)
  • 1 1/22 teaspoons smoked paprika, to taste
  • 1/4 cup extra virgin olive oil
  • 24 tablespoons water, as necessary
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350 degrees and roast the garlic (about 45 minutes). This can be done the day before. (click here for instructions)
  2. Place the beans in your food processor or blender.
  3. Squeeze the roasted garlic out of the peel on top of the beans. Add the smoked paprika, olive oil and salt and blend.
  4. If the dip isn’t as smooth as you would like, add water, 1 tablespoon at a time, and blend until the dip is just the way you like it.

Notes

Serve with tortilla chips, crackers, sliced carrots and/or cucumbers.

Options – Sprinkle with toasted pine nuts and/or chop Italian parsley or cilantro and sprinkle on top. You can add a few tablespoons of tahini too, if you want it to taste more like a traditional hummus. You can also substitute cannelini or garbanzo beans.
